The vineyard in the Paradiesgarten stands on a north-westerly slope upon a yellow, and very sandy red sandstone. It is important that we always harvest the vineyard at perfect ripeness. This means that the grapes do not have to be golden yellow or have 100° oechsle. We want to harvest these grapes with a nice amount of acidity and a moderate must weight to reflect the delicacy and structure of the vineyard. 50% of the wine is stored in new tonneaux and the other 50% in used barrels. There are brioche and yeasty aromas here, with a well-balanced salt-acid blend.
