Our R Pinot Gris comes from our oldest plots in Ruppertsberg which has vines that are about 35 years old. As far as we are concerned, the wine should showcase the many dimensions of Pinot Gris each year. That is why we harvest some of the grapes at full ripeness and subject them to a maceration period of 4–7 days. The second factor at play here involves harvesting grapes with healthy levels of the botrytis cinerea fungus (noble rot). The different batches mature in their barrels for up to eleven months and are later blended together. The maceration period gives the wine a deep and spicy fruit flavour, and the botrytis cinerea provides for a very finely balanced sensation on the palate.
